Recipe for Pizza

We have a fun tradition at our house (and it includes a recipe for pizza). We take turn every Thursday having a family dinner at our house or my brother’s house. We have a 4-year-old and he has a 5 and 9-year-old. We usually end up inviting a few friends or neighbors into the mix. We end up with a bunch of different kids with different tastes, a few picky eaters, and only one chance to interest them in a healthy dinner.

So here’s our tactic…

Homemade mini pizzas.

It’s genius if we do say so ourselves. We have a super simple super healthy homemade pizza crust recipe. We whip that up, divide it, and let the kids have fun pressing out their own dough. Then we supply bowls full of toppings and let them put what they choose on their pizzas. We also provide a green salad or raw dipping veggies to compliment the meal.

This way there’s no complaining that so and so doesn’t like what we’re having. How can they when they were in charge of making their own dinners?

And by the way, there are a lot of adult picky eaters out there too. You don’t have to save this meal for kids. Adults can’t complain either with this one.

Note: To make it healthier, we use whole wheat flour and fresh organic ingredients.

We’re having mini pizzas this Thursday as a matter of fact. I can’t wait!

The mini pizza idea is Fantastic! I've made this one as the single large pizza about 5 times already and am able to make it with whatever I happen to have on hand that day and it always turns out great! Last time was pesto sauce (from the frozen pesto cubes I made last fall from the herb garden)with some chopped left over chicken, thinly sliced Red Pepper, Red onion and some feta cheese.
Question though, do you do a full whole wheat crust? I have done it with all bleached flour once or twice (just what was available), and the with 50/50 once and the half and half mix seemed too dense.

Hey Marci,

Thanks for the comment. That pesto pizza sounds delicious! You'll have to let us know how you make your own pesto sauce. That's one of my favorites. Especially with pine nuts....mmmm.... We grow a little container herb garden ourselves in the summer, so we would love to try that out.

Yes, we do use all wheat flour for the crust. And yes, it is a little dense, a little chewy, but still very good.

We actually haven't tried it with white flour yet.

So there you have it folks, if you want a lighter crust use white flour.
